EL KONEJO KAMPERS BREAKFAST KREW CHECKLIST

AA Set Up (6:30am - serving starts at 8:00am)

Set up 11 round tables w/ 8 chairs each and place the following items on the tables..

  • Table Number Centerpiece
  • Tablecloths (preferred) or Place mats
  • Napkins
  • Silverware
  • Salt & Pepper
  • Small wooden bowl with syrup (pre-packaged)
  • Small wooden bowl with jelly (pre-packaged)
  • Small wooden bowl with butter

 
  • Set up serving table with
    • 2 Coffee pots (100 cup & 40 cup)
    • 1 Coffee Pot (40 cup) w/ Water for Tea
    • Coffee cups
    • Orange Juice and cups
    • Place mats
    • Napkins
    • Silverware
    • Salt & Pepper
    • Bowl with syrup (pre-packaged)
    • Bowl with jelly (pre-packaged)
    • Bowl with butter
    • Condiments (Catsup, hot sauce, etc.)
    • Tray w/ creamer, sugar, stirring sticks, etc.
    • Tea Bags
    Check with Lodge pantry prior to Sunday to be sure the following is available.
    • 1 1/2 cases of eggs
    • 2 boxes of sausage links or 1 box patties and 1 box links
    • 1 1/2 boxes of bacon
    • 2 dozen biscuits
    • 6 bags shredded hash brown potatoes
    • 6 quarts of frozen orange juice concentrate
    • 1-2 bags gravy mix
    • 1-2 bags pancake mix
    • Coffee and Tea Bags
    • Liquid margarine
    • Small paper cups for juice
    • Small plates for toast
    • Soap for washing dishes
    • Oil for cleaning the grill
    • Aprons for the kitchen crew
    • Dish towels for the kitchen crew
    • Breakfast order forms (standard for AAs and w/ blueberry pancakes for Elks)
    • Drink tickets
    Go to the Lodge on Saturday to be sure everything is out of the freezer/storeroom and accessible in the kitchen. Get keys from bartender to open by 6:30am!!!
    Obtain Elsewhere.
    • 2 lb. pork sausage for biscuits and gravy
    • 1 white bread (Day old bread for toasting is fine.)
    • 3 wheat bread
    • 2 rye bread
    • 3 sourdough bread
    • 2 lb. butter (for toast)
    • 2-3 packages frozen blueberries (for pancakes)
    • Anything else not found in the lodge pantry
    Staff (6:30am12:00noon)
    • 1 cashier ($50 bank from bar)/counter person
    • 2 or 3 servers
    • 1 egg person
    • 1 grill person (pancakes & potatoes)
    • 1 meat person (bacon & sausage links)
    • 2 kitchen floaters (egg setup/check orders/relief)
    • 1 toast person
    • Dishwasher(s) (see Additional Hints below)

    Lodge (Bar Area) Set Up (6:30am - serving starts at 9:00am)

  • Set up serving table with
    • 1 Coffee pot (100 cup)
    • Orange Juice and cups (Delay until 9:00am)
    • Place mats
    • Napkins
    • Silverware
    • Salt & Pepper
    • Bowl with syrup (pre-packaged)
    • Bowl with jelly (pre-packaged)
    • Bowl with butter
    • Condiments (Catsup, hot sauce, etc.)
    • Tray w/ creamer, sugar, stirring sticks, etc.
    Additional Hints
    • The Kamper Klub keeps the net profits from the breakfast
    • We reimburse the crew leader for all out-of-pocket expenses (see obtain elsewhere)
    • We pay the lodge for materials used and overhead expenses (the treasurer will help with this)
    • Keep track of the Lodge supplies used - forms are available at the kitchen window
    • Paid dishwashers are Krew Chief optional (We currently wash our own dishes and clean the grill (saves money))
    • Locate the order forms (the Kampers have their own forms for both AAs and Elks)
    • Clean the grill when finished - cooking oil works wonders...
    • If you offer omelets or any other special, you will need to bring the fixin's
    • Kitchen Krew receives 1 drink ticket each; after that they buy their own drinks.
