EL KONEJO KAMPERS BREAKFAST KREW CHECKLIST

AA Set Up (6:30am - serving starts at 8:00am)

Set up 10 tables and cover w/ paper tablecloths from storage area nearest pay phone. 6 chairs per table. (Can be done on Saturday if no event at Lodge on Saturday evening. Check with Dee in the office.)

  • Napkins
  • Silverware
  • Salt & Pepper
  • Small wooden bowl with syrup (pre-packaged)
  • Small wooden bowl with jelly (pre-packaged)
  • Small wooden bowl with butter (put out Sunday morning)
  • Decorations from storage room if you choose

 

Set up serving table with

  • Coffee pot
  • Hot water pot (for tea)
  • Coffee/tea cups
  • Tea bags
  • Orange Juice and cups
  • Ice water
  • Condiments (Catsup, hot sauce, etc.)
  • Tray w/ creamer, sugar, stirring sticks, etc.

 

Set up an extra table for AAs to put their books, etc.
 

Set up a small table by the outside door for AAs to sell breakfast orders.
 

Check with Lodge pantry prior to Sunday to be sure the following is available.

  • 1 case of eggs
  • 2 boxes of sausage links
  • 1 box of bacon
  • 3 dozen biscuits
  • 3 (or 4) quarts of frozen orange juice concentrate
  • 1 bag gravy mix
  • 1 bag pancake mix
  • Small paper cups for juice
  • Small plates for toast
  • Sterno for the food warmers
  • Soap for the dishwasher
  • Aprons for the kitchen crew
  • Dish towels for the kitchen crew and dishwasher
  • Breakfast order forms (AAs have their own)
  • Drink tickets

 

Go to the Lodge on Saturday to be sure everything is out of the freezer/storeroom and accessible in the kitchen. Get keys from bar manager or Lodge food manager to open by 6:30am!!!

 

Obtain Elsewhere.

  • Frozen Hash Brown potatoes
  • 2 lb. pork sausage for biscuits and gravy
  • 2 white bread (Day old bread for toasting is fine. Check Lodge supply before purchase.)
  • 2 wheat bread
  • 2 rye bread
  • 3 sourdough bread

 

Staff (6:30am - 12:00 noon)

  • 1 cashier ($50 bank from bar)
  • 2 or more servers
  • 1 counter person
  • 1 egg person
  • 1 grill person (pancakes & potatoes)
  • 1 meat person (bacon & sausage links)
  • 1 toast person
  • 1 kitchen floater (egg setup/check orders/relief)

 

Lodge Set Up (Serving starts at 9:00am)

  • Set up pool table with cover and table cloth
  • Place mats
  • Silverware
  • Napkins
  • Salt & Pepper
  • Coffee/tea cups
  • Tea bags
  • Juice and cups
  • Syrup, Jelly, Butter
  • Condiments (Catsup, hot sauce, etc.)

 

Additional Hints

  • Make you have a dishwasher (should be done ahead of time – Lodge food manager or bartender can help)
  • Locate the order forms (the Kampers have their own forms - see below)
  • Keep track of the Lodge supplies used - forms are available at the kitchen window
  • Clean the grill when finished - lemon juice works wonders...
  • If you offer omelets or any other special, you will need to bring the fixin's
  • Kitchen Krew may use 2 drink tickets each
